Cold Mexican Pizza

Ingredients:

    • 1 square 12”x12” pizza crust, rubbed with garlic oil and baked
    • 1 cup salsa, fresh made or store bought
    • 2 1/2 cups shredded Monterey Jack cheese
    • 1 cup black beans
    • 1 cup frozen corn, thawed
    • 1 jalapeño, sliced
    • 1/2 cup red onion, diced
    • 2 Chiquita® Fresh & Ready™ avocados, diced
    • 2 limes, sliced in wedges
    • 1 cup cilantro, chopped

Instructions:

Once your crust is cooked and cooled down, spread the following in order: salsa, 21/2 cups cheese, beans, corn, jalapeño (optional), red onion, diced avocado and cilantro.

Cut into six squares (one cut down the middle and two cuts
perpendicular to the first cut). Serve with lime wedge.

* You can also serve with sour cream or replace salsa
with enchilada sauce or mole and use salsa as topping.
