
Chicken Salad with Chiquita Banana Mayonnaise and Grapes
6 chicken breasts halves, cooked and cubed
12 cups mixed lettuces
1/2 cup walnut or pecan halves
2 bunches seedless grapes, or about 48 grapes, halved
Chiquita Banana Mayonnaise:
3 medium Chiquita bananas, chunks
2 teaspoons chopped garlic
3/4 cup non-fat plain yogurt
1 tablespoon honey
2 teaspoons lemon juice
1/4 teaspoon salt
Place banana mayonnaise ingredients in a blender or food processor. Blend until creamy.
Arrange lettuces on six plates. Toss chicken with banana mayo; divide onto salads. Sprinkle with grapes and walnuts.Nutrition Information Per Serving
