Puree 3 bananas and whisk lemon juice, mayonnaise, yogurt and tarragon. Refrigerate at
least 2 hours. Cut chicken or turkey into bite size pieces and place in a bowl. Add green
apples, raisins, walnuts, and the remaining 2 bananas, cut into thick chunks. Add
the banana puree and toss to coat the ingredients. Serving suggestion - serve
chilled on a bed of mixed salad greens. |
