Chiquita® Banana Bombay Salad

Chiquita Bananas

lemon juice

¼

cup

mayonnaise

¼

cup

yogurt

¼

oz.

dried tarragon

cooked chicken or turkey breast
(boneless, skinless)

chopped green apples

½

cup

raisins

½

cup

chopped walnuts

 
Puree 3 bananas and whisk lemon juice, mayonnaise, yogurt and tarragon. Refrigerate at least 2 hours. Cut chicken or turkey into bite size pieces and place in a bowl. Add green apples, raisins, walnuts, and the remaining 2 bananas, cut into thick chunks.  Add the banana puree and toss to coat the ingredients.  Serving suggestion - serve chilled on a bed of mixed salad greens.
