
Holidays are brighter with Banana Cranberry Nut Bread. Deliciously moist and bursting with Chiquita bananas, cranberries and walnuts, it's the perfect bread for holiday entertaining-- or to give as a gift.
Banana Cranberry Nut Bread
1/2 cup butter or margarine
3/4 cup sugar
2 eggs
1 1/2 cups Chiquita bananas, mashed (about 3 large)
1 teaspoon grated orange rind
1/2 teaspoon salt
4 teaspoons baking powder
1 2/3 cups flour
1/2 cup cranberries, coarsely chopped
1/3 cup walnuts, chopped
Preheat oven to 375 degrees F. Grease 3 small (6" x 3" x 1 3/4") loaf pans. Beat together butter and sugar until light and airy. Add eggs, bananas and orange rind. Combine salt, baking powder and flour, add to butter mixture. Mix well and stir in cranberries and walnuts. Divide evenly into loaf pans. Bake for 45-55 minutes or until an inserted toothpick comes out clean. Remove from pans and cool on wire rack. Slice and enjoy warm or at room temperature.
