Granita makes a great lactose free alternative to ice cream, and makes a great refresher at the end of any meal.

Place the sugar and water into a saucepan and gently heat until the sugar dissolves to make a simple syrup. Leave to cool.

Cut the Chiquita pineapple into chunks and liquidise in a juicer. Combine the pineapple and syrup and pour into an 35 / 13.5” x 25 cm / 10” shallow baking tray. Place in the freezer for 2 hours, stirring every 30 minutes.

Scoop the partially frozen mix into a lidded tub or container and freeze again for 1-2 hours to firm up completely.

Serve garnished with the mint and berries.

TIP: Serve as a palate cleanser in between courses.
