Roast grated coconut in a non-stick frying pan until golden brown.
Mix coconut milk with honey, vanilla and salt in a bowl. Then mix in chia seeds and half of grated coconut.

Pour the mixture in 2 glasses and put in the fridge for at least 4 hours (but preferably overnight).

Peel and slice bananas. Fry in coconut oil and add a little bit of coconut sugar for browning.

Place fried banana on chia pudding and sprinkle with remaining grated coconut.
