These fruity skewers are perfect for a summer BBQ or an evening snack!

You will need:
8 wooden skewers, soaked in water for 5 minutes

Preheat the grill/broiler to high.

Thread prawns onto the skewers, followed by the pineapple and red pepper, and repeat so that there are two of each ingredient on each skewer.

Brush each side of the skewers with rapeseed oil using a pastry brush and place onto a foil-lined baking tray. Grill for 7-10 minutes, turning at regular intervals until the prawns are pink.

For the dipping sauce, combine all of the ingredients in a small bowl. Serve immediately.

TIP: Place the skewers on the BBQ for 3 minutes per side if you’re looking to cook outdoors.
