Cover bottom of the springform with baking paper. Grind graham crackers with butter, spread over bottom and press with a spoon. Preheat oven to 350°F).

Beat cream cheese using mixer for approx. 3 minutes with sugar until soft. Beat flour and then sour cream to it. Add eggs one at a time and beat for a moment until mixture is smooth.

Pour batter onto cookie base. Put springform pan into the oven sled and fill it with hot water until the mold is half underneath. Put springform pan into oven and bake for about 40 minutes. Lower oven temperature to 325°F and bake for another 30 minutes. The cake may be slightly colored. Take mold out of sled and allow to cool.

Halve the passion fruit, scoop out flesh. Peel and cut the Chiquita bananas into slices.

Divide the passion fruit flesh and Chiquita banana slices over the top of the cheese cake and garnish with mint.
