Preheat the oven to 347°F and cover a cake tin with baking paper.

Take four bowls for preparation. Separate the egg yolks and egg whites in two separate bowls.

Wisk the egg-white until stiff. Add ½ cup of sugar with the egg-white until the sugar is dissolved.

Sieve the flour and the potato starch in a different bowl. Add the baking powder and the sea salt and mix it well. Set aside.

Beat in the fourth bowl the butter creamy and add the rest of the sugar, lemon + lemon zest, vanilla-extract through it. Mix with a mixer at medium speed for approximately 6 minutes. During the mixing, add the egg yolks one by one to the mixture.

Scoop the flour-mix with the egg-white.

Mash the Chiquita bananas and add to the bowl with the egg yolks and creamy butter.

Add ¼ of the egg-white and scoop careful with the other mixture. Do this also with the rest of egg-white.

Add the batter in the cake tin and bake for approximately 45-55 minutes. Let the cake cool down.
