Preheat the oven to 180 ºC. Grind the almonds in the food processor. Peel and prune the bananas and mix them with oatmeal, nut paste, almonds, cinnamon and cocoa.
Cover a baking sheet with parchment paper and make a ball of the dough for each cookie, the size of a small ping pong ball. Place this on the baking sheet and press them flat.
Bake the cookies for about 20 minutes and let them cool.
Meanwhile, melt the pieces of chocolate au bain-marie (make sure there is no drop of water in the chocolate).
Move a spoon, dipped in the chocolate, quickly above the biscuits to create lines and sprinkle with finely chopped pistachio nuts.
