Place all of the ingredients in a blender and blitz until creamy and smooth.

Divide between two glasses and place in the fridge for at least 4 hours or overnight.

Before serving, top with pistachios and fresh raspberries.

TIP: Try folding though some extra raspberries for a little more sharpness.
