Everyone loves a healthy sweet snack. So what’s the best stage of ripeness to eat a banana? A lot depends on your personal tastes and nutritional needs. Everyone knows, less ripe bananas have a milder, fresher taste and they get sweeter as they ripen.

The change in sweetness is due to the resistant starch in the banana breaking down into natural simple sugars. The riper the banana, the more sugars it will have. So if you have a sweet tooth, a great healthy sweet snack is a riper more yellow banana – even one with brown spots!

If you’re looking for low calorie snacks, a less ripe (greener) banana will be a better choice because the resistant starch helps to keep you feeling full for longer. And if you’re diabetic, you CAN eat bananas – in moderation –  as long as you properly account for their carbohydrate content.

Ah, so what to do with overripe bananas? Every now and again a banana may be forgotten, left to turn brown at the bottom of the fruit bowl.
