Cook rice according to the instructions on the package. Preheat the oven to 300°F. Slice the garlic and the pulp of the pepper (remove the seeds and the membrane). Cut small carrot into small pieces.

Sauté garlic, pepper and carrot in the oil and add tomatoes. Reduce slowly until sauce thickens. Add salt to taste.

Peel bananas and cut them in half. Fry bananas (briefly) in oil over medium-high heat until they brown. Add some honey while frying the bananas to caramelize and turn them over. Scoop them into a bowl and keep them warm in the oven.

For the final step, fry the eggs.

Divide rice on plates. Add sauce on top of rice or serve sauce separately. Add bananas and fried eggs.
