Start the day right with these naturally sweet and fruity cookies.
Preheat the oven to 180 degrees C and line a baking tray with parchment paper. Combine the oats, desiccated coconut and salt in a bowl. Mash the bananas until smooth.
Add the mashed bananas, coconut oil, honey, cinnamon and vanilla extract to the dry ingredients and stir until well combined. Add the frozen blueberries. Place a tablespoon of the mixture onto the lined tray and repeat until you have used all the mixture.
Bake for 25 minutes or until golden. Once cooked, leave to cool on the tray for 5 minutes before removing to a wire rack to cool completely. They will keep in an airtight container for 5 days.
