Start by toasting the toppings: place the flaked almonds, pistachios and flaked coconut into a dry pan over a medium heat and stir gently until golden brown, about 3 minutes. Keep an eye on them as they may burn easily. Remove from pan into a bowl and set aside.

In a large bowl, whisk the orange juice, apple juice and honey to make the dressing.

Hull and quarter the strawberries, peel and slice the kiwi into 1/2 cm rounds, stone and cut the peach into eighths, and peel and separate the orange into segments. Place all of these, along with the blackberries, into the dressing and toss to combine.

Spoon onto serving plates and cut the Chiquita mini bananas down the middle, and lay on top. Spoon over any leftover dressing, then sprinkle with the toasted nuts and coconut.

TIP: Sprinkle with cocoa nibs for an indulgent twist.
