Finely dice the shallot and garlic. Heat 1 tbsp olive oil in a frying pan over a medium heat, then add the shallots and garlic, cooking for 5 minutes or until translucent. Add the bacon and chilli flakes and cook until lightly crispy, for another 5 minutes or so. Stir in the Chiquita pineapple so that everything is coated.

In a large bowl, whisk all of ingredients for the dressing, then tip the salad leaves into the bowl and toss so that the leaves are well coated in the dressing. Add the bacon and Chiquita pineapple mixture, toss once more, and spoon onto serving plates.

Top with the sliced chilli and coriander leaves before serving.
